With their big, crackly-sugared tops, no one will guess these yummy muffins have just 1 teaspoon of added sugar! Better yet, it takes just a few minutes to mix up the batter and deliver warm bakery-style deliciousness.

Another thing I really love about this muffin recipe is that it makes a “small batch” of 6 muffins (instead of the usual dozen), making it perfect for when a tempting twelve is more than you want (or need). With big juicy blackberries in season, now is the perfect time to give these mouthwatering blackberry muffins a try!

MAKES 6 SERVINGS

INGREDIENTS

1/2 cup plain nonfat Greek yogurt (or light sour cream)
1 large egg
2 tablespoons melted margarine or butter
1 1/2 teaspoons orange zest
1 cup all-purpose flour
1/3 cup granulated no-calorie sweetener*
2 tablespoons granulated sugar, divided
1 1/2 teaspoons baking powder
1/4 teaspoon baking soda
3/4 cup fresh or frozen blackberries

INSTRUCTIONS

1. Preheat the oven to 375°F. Spray muffin tins with non-stick cooking spray.

2. In a small bowl, whisk together first four ingredients (yogurt through zest). In a medium bowl, combine flour, sweetener, 1 1/2 tablespoons sugar, baking soda, and baking powder. Add the blackberries, toss them in the flour, and then add the yogurt mixture. Stir just until the dry ingredients are moistened.

3. Spoon batter into prepared muffin cups, filling each 2/3 full. Sprinkle each muffin with 1/2 teaspoon of sugar. Bake for 18-20 minutes, or until tops are brown and center springs back when lightly touched. Cool for 5 minutes before removing to a wire rack.

*When using Truvia for Baking (or another all-natural sugar replacement), follow package directions for the equivalent of 1/3 cup of sugar. (For “twice-as-sweet” lower-calorie sugar/sugar substitute blends use 1/4 cup and omit the 1 1/2 tablespoons of granulated sugar in step 2.)
