15-Minute Garlicky Baked Shrimp

This oven-baked, guilt-free scampi-style dish topped with yummy buttery breadcrumbs from my book, Eat What You Love Everyday! will your day. Incredibly delicious, and incredibly easy-to-make, it’s guaranteed to make your shrimp loving guests swoon. To serve it as a simple meal simply double the portion and add a baked potato side and green salad (pop potatoes into the microwave for 9 minutes and dinner is on the table in a flash).

You can take the tails off, but when served as an appetizer I like to leave the tails on as they make it easy to pick up the shrimp. Small plates or napkins are all you need.

Makes 8 Servings

1 1/4 pounds extra large shrimp (about 24 -26 per pound), peeled and deveined
Zest of one lemon
3 – 4 garlic cloves, minced
1/2 teaspoon paprika
1/4 teaspoon salt, optional
2/3 cup panko breadcrumbs
2 tablespoons butter, melted
2 tablespoons grated Parmesan cheese
1/8 teaspoon black pepper

Fresh parsley for garnish, optional

1. Pre-heat the oven to 400ºF.

2. Place shrimp in a large bowl. Add the zest, garlic, paprika, and salt, if desired, and toss well. Arrange the shrimp in a baking dish, laying them flat and close together.

3. In a small bowl, mix the panko crumbs with butter, Parmesan, and black pepper. Sprinkle the panko mixture over the shrimp, pat it onto the shrimp lightly, and bake for 12-15 minutes, or until shrimp is cooked and crumbs are brown. Sprinkle with parsley, if desired.
