If you love creamy spinach dip and moist tasty salmon you are sure to love this dish which I created for my book Eat What You Love Quick & Easy.
The first time I made this entree I actually did so for two very last-minute dinner guests. Remarkably, less than 30 minutes after I extended the invitation I had a restaurant-worthy meal on the table.
Ingredients
2 cups finely chopped fresh spinach
3 tablespoons light mayonnaise
2 tablespoons Panko breadcrumbs
2 tablespoons grated Parmesan cheese
1/4 teaspoon black pepper
1/8 teaspoon salt
4 (5-ounce) thick, center-cut, skin-on salmon fillets
Instructions
1. Preheat the oven to 375°F. Line a baking sheet with foil and set aside. In a small bowl, combine first 6 ingredients (spinach through salt).
2. Cut a slit lengthwise along the top of each piece of salmon, taking care to not cut completely through. Pull sides apart and spoon 3 tablespoons of the spinach mixture into the middle of the slit, and smooth the filling into a mound.
3. Transfer fillets to the baking sheet, and bake for 17 minutes, or until the center of the fillet is cooked through. Use a spatula to remove the skin before serving.
