With everything that has to be done over the holidays, this recipe is a life savior. Made in mere minutes, it’s a HUGE crowd-pleaser, and it suits almost any diet. Most of all, it’s unbelievably tasty! Simply grab a container of your favorite salsa, and a few fresh ingredients along with tiny bay shrimp, and viola’, you have a festive red and green holiday-worthy “homemade” salsa ready to go for any gathering. Serve it with your favorite chips, red and/or green pepper strips of bell pepper or for a touch of elegance, spooned into endive leaves.
MAKES 1 ½ CUPS
1 cup fresh prepared salsa
2 tablespoons chopped cilantro
2 tablespoons finely chopped green onion
1 tablespoon ketchup
Juice of 1/2 lime
1/2 cup cooked bay shrimp
1. In a medium bowl, combine all ingredients except shrimp, stirring well to combine.
2. Gently fold in the shrimp, and top with additional cilantro, if desired.
Marlene Says: As there is not standardization of the size of shrimp by name (i.e. not all large, jumbo, or small shrimp are the same size), it is best to buy shrimp based on the number of shrimp per pound. For this recipe, anywhere from a 60-70 (shrimp per pound) count, will work well in this recipe.
