Holiday Doodles

Shhh…there’s no need to tell anyone these have just 1/3 of the usual sugar! With the light scent of nutmeg and a crown of sugar and cinnamon, this is one seriously delicious cookie.

My only suggestion – once they are made, keep them out of sight. Otherwise, you may find yourself eating far more than you had planned :).

Makes 24 cookies

2 cups all-purpose flour
1 teaspoon nutmeg
1 1/2 teaspoons cream of tartar
1/2 teaspoon baking soda
1/2 cup margarine or butter, room temperature
4 tablespoons granulated sugar, divided
2 tablespoons corn syrup
1 1/2 teaspoons vanilla
1 large egg
3/4 cup granulated no-calorie sweetener*
1/3 cup light sour cream
2 teaspoons cinnamon

1. Preheat oven to 375ºF. Lightly spray a baking sheet with non-stick cooking spray.

2. In a large bowl, combine flour, nutmeg, cream of tartar, and baking soda. Whisk to combine. Set aside.

3. In a medium bowl, with an electric mixer, beat the margarine or butter, 2 tablespoons of sugar, and corn syrup until light and fluffy. Beat in the vanilla, egg, and sweetener until creamy. Turn the mixer to low and beat in the sour cream and flour until just combined. With moist hands, roll dough into 1-inch balls. Mix together last 2 tablespoons of sugar with cinnamon. Roll the balls in the sugar-spice mix and place on a cookie sheet that has been sprayed with cooking spray. Flatten cookies with the bottom of a drinking glass.

4. Bake for 7 to 8 minutes. Cookies should be soft on top. Remove to a wire rack to cool.

* When using a stevia baking blend like Truvia for Baking, as per the package directions, use 1/2 as much, or 6 tablespoons in the cookie dough.

 

Marlene Says: To make Eggnog Snickerdoodles, add 1 teaspoon nutmeg and 1/2 teaspoon rum extract (optional) to the egg mixture.
