This recipe, from book Eat What You Love Everyday!, offers all the great taste of pizza — in a frittata! The first time I tasted eggs with pizza sauce I fell in love with the combination, and I think you will to. Loaded with veggies and topped with a smattering of pepperoni and melty cheese, it’s pizza – breakfast style!
Made for two, you get half the frittata for just 210 calories. Add some fresh strawberries, a glass light orange juice, and a slice of toast (I like Franciso brand Italian bread), and you have a romantic breakfast that clocks in with just 350 calories – leaving plenty of wiggle room for a wonderful romantic dinner!!
Makes 2 servings
Ingredients
2 large eggs
2 large egg whites
¼ teaspoon garlic salt
¼ teaspoon dried oregano
1 teaspoon olive oil
½ small red onion
½ medium green pepper green pepper
1 cup sliced mushrooms
¼ cup jarred pizza sauce
¼ cup part-skim mozzarella cheese
9 slices turkey pepperoni
1 tablespoon grated Parmesan cheese, optional
Instructions
1. Preheat the broiler. In a medium bowl, whisk together the eggs, egg whites, garlic salt, oregano, and 2 teaspoons water. Cut onion into thin slices. Cut bell pepper into rings, and then cut rings in half.
2. Heat a large ovenproof non-stick skillet over medium heat. Heat the oil, add the onion, and cook for 4 minutes or until softened. Add the green pepper and cook for 1 minute. Add the mushrooms, and 1 tablespoon of water, and cook the vegetables for an additional 2 to 3 minutes, just until the mushrooms slightly soften. Reduce heat to low and pour in the beaten egg mixture. Push the cooked egg to the center, gently allowing the uncooked egg portion to flow to the outside edges of the pan. Continue to do so for another 2 to 3 minutes. Egg mixture should be even across the pan and almost set.
3. Spoon the pizza sauce in small dollops over the frittata and lightly spread it. Sprinkle the mozzarella evenly over the sauce and top with top with the pepperoni slices (in pizza fashion). Sprinkle with Parmesan, if desired, place under the broiler, and cook for 3 minutes, or until cheese is melted and bubbly.
4.Use a spatula to loosen the edges and slide the frittata onto a plate. Cut into “pizza” wedges and serve.
