I have made these green beans more times than I count. The beans actually get treated to three great cooking techniques: searing, steaming, and glazing, and yet they are done in 10 minutes using only one pan!
But the best thing about this unique yet simple preparation is that you get delicious, company-worthy beans, every, single, time.
Cooking for two? Simply divide all of the ingredients expect the water in half (P. S. Leftovers are delicious.)
Makes 4 servings
Ingredients
1 teaspoon olive oil
1 teaspoon minced garlic
1 pound fresh green beans, washed and trimmed
1 tablespoon water
3 tablespoons sweet vermouth, divided
1/4 teaspoon seasoned salt, or to taste
Instructions
1. Heat the oil in a large nonstick skillet over medium-high heat. Add the garlic and cook for 10 to 15 seconds. Add the green beans and sear while stirring for one minute.
2. Pour in the water and 2 tablespoons of the sweet vermouth. Immediately cover. Steam for 4 to 5 minutes, or until crisp-tender.
3. Remove the lid, add the remaining vermouth and sprinkle with seasoning salt. Cook for 1 to 2 minutes longer, tossing until the water evaporates and the vermouth has glazed the beans.
