Marvel-ous Strawberry Mousse

With only 100 slimmin’ calories, this easy, luscious, made-in-a-blender mousse delivers big in luxurious texture and fresh strawberry taste! If that were not marvelous enough, with 7 grams of protein, a healthy dose of Vitamin C, and 10% of your daily calcium requirement, it’s truly a marvel when it comes to great nutrition (and it’s dessert!!!).

While I have made this in the past with cottage cheese (and it is fabulous), after making it with Greek yogurt, it is not only just as tasty, but just as healthy! Still, with only 100 slim calories and 7 hefty grams of protein, it soars with fresh strawberry flavor. Honestly, this is one dessert that’s truly as nutritious as it is delicious.

While I have marked it as optional, the whipped egg white keeps it light and adds a lovely mousse-like texture.

Makes 6 Servings

Ingredients

1 envelope unflavored gelatin
2 cups fresh sliced strawberries
1 cup nonfat or low-fat Greek yogurt (you can also substitute low-fat cottage cheese)
2 tablespoons granulated sugar
6 tablespoons granulated no-calorie sweetener (or 3 tablespoons Truvia Baking Blend)*
1/4 teaspoon almond extract
1/2 cup light sour cream
3/4 cup light whipped topping
1 large egg white (optional, wee note above)
Additional sliced strawberries and/or light whipped topping for garnishing

Instructions

1. In a small microwave-safe bowl sprinkle the gelatin over 1/4 cup of water. Let sit for 3 minutes. Microwave for 20-30 seconds on high to dissolve gelatin. Stir, and set aside.

2. Place the strawberries in a blender (or use an immersion blender) and blend until pureed. (If using cottage cheese add it and blend until smooth (until there are no cheese curds left).

3. Add the yogurt, sugar, sweetener, almond extract, and gelatin mixture, and pulse to blend. Pour into a medium bowl, and gently fold in the sour cream and whipped topping.
Whip the egg white to soft peaks and fold it into the mousse. Pour it into a 1-quart capacity serving bowl or portion 1/2 cup servings into individual cups or stemmed glasses. Refrigerate for at least 2 hours before garnishing (if desired) and serving.

*Sweetener Options: To use all-natural stevia-based Truvia for Baking use 1/4 cup and omit the granulated sugar.
