There are many recipes floating around for this ultra-easy, fool-proof cake, and I think I tried them all! Many use an entire can of pumpkin, but in my trials I found that while this produced a moist cake, it was too dense to be considered heavenly. And recipes that called for less than 3/4 cup of pumpkin, or less spices, well, they just didn’t have enough pumpkin and spice oomph for me.
This 10 minute, minimal effort recipe, produces a delectable fat free pumpkin cake that is lightly textured like a chiffon cake and perfectly scented with pumpkin pie spices. Baked as a sheet cake, it’s perfect for family dinners, potlucks or last-minute dinner guests (and with just 115 calories a piece, it’s wonderfully guilt-free). If desired, you can also bake it in an angel food pan for a loftier presentation. Expect to add 10 minutes to the baking time.
Finish it off with a touch of powdered sugar (a couple of teaspoons will do it), and/or light whipped topping and a sprinkle of cinnamon to keep it extra light or go all out and top with Whipped Cream Cheese Frosting for a little bite of pumpkin heaven.

Ingredients
1 box angel food cake mix
3⁄4 cup canned pumpkin
1¼ teaspoons cinnamon
½ teaspoon nutmeg
¼ teaspoon ginger
1⁄8 teaspoon cloves (optional)
Instructions
1. Pre-heat oven to 350 degrees. In a large bowl, with an electric mixer, make angel food cake according to package directions. In a small bowl, mix spices into pumpkin and then carefully fold pumpkin by spoonfuls into angel food cake batter, taking care not to deflate batter.
2. Spoon batter into an ungreased 9 x 13-inch pan and smooth. Place cake in the middle of the over, and bake for 30 to 35 minutes or until cracks looks dry and cake springs back when lightly touched. Remove from oven and cool cake upside down. When cool, frost, or serve the cake with a dusting of powdered sugar and/or whipped topping, if desired.
Marlene Says: Frosting the cake with an 8-ounce tub of light whipped topping and a sprinkle of cinnamon adds 30 calories and 3 grams of carbohydrate per piece. Be sure your bowl and beaters are clean and free of any grease or oil before making this cake.
