5-Minute Blackberry Crisp

There’s quick. And then there’s really quick!

This fantastic crisp takes five minutes from start to finish–and that’s if you dawdle. When heated in the microwave the frozen berries release their juice to create a warm fruity base, and a crushed granola bar does an amazing job at imitating the usual crunchy oven-baked topping. This dessert is so guilt free, you can even eat it without worry for breakfast (like I sometimes do :).

Makes 1 Serving

Ingredients

3/4 cup frozen blackberries
1 tablespoon no-calorie granulated sweetener (or 1 1/2 packets of choice)
1/2 teaspoon cornstarch
1 bar (1/2 package) Nature Valley Oats ’n’ Honey Granola Bar, broken into pieces
Light whipped topping for garnish (optional)

Instructions

1. In a small microwavable bowl, mix together the berries, sweetener, and cornstarch. Microwave for 1 minute.

2. Remove and top with the granola pieces. Serve with the whipped topping.

Marlene Says: While fresh is best most of the time, that is not the case here. Frozen berries exude more liquid when they cook which creates the sauce with this berry crisp. Assorted frozen berries also work great.
