Warm Sweet Cinnamon Apples – For Two

Warm, sweet, maple-cinnamon laced apples plus cool creamy yogurt = breakfast yum!

Last week I attended a lovely lunch & learn cooking event put on by siggi’s Icelandic-style yogurt. Similar to Greek-style yogurt, when making Icelandic yogurt, or skyr, most of the whey is drained off leaving a thick, creamy yogurt high in protein, and lower in sugar, than traditional American-style yogurts.

One of the flavors I was given to taste was Pumpkin & Spice. Oh-my-goodness, it was so yummy! But as I am always thinking about what I can do to take flavor to the next level, the next thing I knew I was day dreaming about eating it atop warm, cinnamon-y, maple-scented apples – like those in my Hot Apple Stir-Fry recipe.

After grabbing some fresh apples at the Farmer’s Market, I gave it go, only this time instead of slicing the apples I chopped them, and scaled the recipe for two. I paired the warm apples with yogurt for my breakfast, and my son James put the other half on his French toast (exclaiming, “YUM.”).

Of course, you could also enjoy a warm apple & yogurt parfait for dessert – or even for an afternoon snack. With their high protein and lower sugar content, Icelandic and Greek-style yogurts do a body good!

Last, but not least, you could also use the Warm Sweet Cinnamon Apples as a topper for ice cream. Packed with the goodness of apples, and low in added sugars, I say why not?

Makes 2 servings

1 teaspoon butter
2 small or 1 large apple (~1/2 pound), peeled and chopped or sliced
Scant ½ teaspoon ground cinnamon
2 tablespoons reduced-sugar maple-flavored syrup*
2 tablespoons water

1. Melt the butter in a medium saucepan over medium-high heat. Add the apples, cinnamon and syrup and sauté for 5 to 6 minutes, or slightly softened.

2. Add water and stir and stir and continue for 1 to 2 minutes, or until the apples are tender to your taste and nicely coated with syrup and cinnamon.
