When you need a Mexican-food fix, it doesn’t get any quicker than this! I make these amazingly crispy taquitos in no time flat by “frying” them in my air fryer for 5 minutes, but you can also bake them in the oven for 10 minutes short minutes instead.
The velvety avocado salsa is a flavorful sauce you’ll love to have in your sombrero (so to speak). Compared to guacamole, not only does it stretch the deliciousness of one avocado, it also lowers the calories. Perfect on tacos or salads–or for dipping your chips— it’s my favorite taqueria sauce.
MAKES 4 SERVINGS
TAQUITOS
8 thin corn tortillas*
1 1/2 cups cooked shredded chicken breast
½ cup reduced-fat Mexican cheese blend
8 teaspoons chopped green onion
AVOCADO SALSA
1 medium ripe avocado (3/4 cup mashed)
2 tablespoons lime juice (about 1 lime)
¾ teaspoon garlic salt with parsley
¼ teaspoon onion powder
pinch of pepper
1. Preheat oven to 400°F. Line a baking sheet with foil and spray with cooking spray. (See air fryer temperature and time.)
2. To make the taquitos, microwave 2 tortillas at a time on high for 30 seconds. Spread 3 tablespoons of chicken near the front edge of the tortilla, top with 1 tablespoon cheese and 1 teaspoon green onion. Roll tortilla over meat into a tight roll and place seam side down on baking sheet (or plate if air frying). Repeat with remaining tortillas.
3. Spray taquitos lightly with cooking spray and bake for 10 minutes or until tortillas crisp.
4. While taquitos are cooking, combine all of the salsa ingredients and 1 1/4 cups water in a blender and puree until smooth (alternately, use a large container or jar and an immersion blender). Adjust water for desired thickness. Serve each taquito with 1 tablespoon sauce.
* I use Mission brand thin corn tortillas. They do not break as easily upon rolling.
