Any Day Stuffin’ Muffins

Any meal will feel special with these easy-to-make muffins made of stuffing! A quick sauté of fresh vegetables combined with spices and green onion take the taste of packaged stuffing mix to homemade heights.

Pack the mix into muffin cups for a fun twist that ensures quick cooking and easy portion control, or spoon it into a 1 to 1 1/2 quart dish and bake (serves 8)

8 to 12 servings (makes 12 “muffins”)

¾ cup diced onions
½ cup diced celery
½ cup diced red pepper
1 teaspoon dried sage, crumbled
1 teaspoon finely chopped fennel seeds,or more to taste
¼ teaspoon black pepper
¼ cup sliced green onion
1 (6-ounce) package lower sodium chicken stuffing mix (like Stove Top)*
2 large egg whites

Instructions

1. Pre-Heat oven to 425 F. Line 8 muffin cups with foil liners, or lightly spray with nonstick cooking spray.

2. Melt the margarine in a medium sauté pan over medium heat.
Add the next 6 ingredients (onions through black pepper), and cook for 6 to 7 minutes, or until vegetables are softened. While the vegetables cook, place 1 1/4 cups water in a microwave-safe measuring cup and heat on high for 2 minutes.

3. Remove the pan from heat and stir in the green onions and stuffing mix. Add the hot water, and toss lightly with a fork to evenly distribute. Transfer the mixture to a bowl, let cool for 5 minutes, then gently stir in egg whites.

4. Scoop 1/3 cup of stuffing into each muffin cup. Spray the muffin tops with cooking spray and bake for 10 minutes, or until tops are lightly browned.
