Skinny Fast-Fix Baked Apple Sundae

10-minutes to heaven! At a mere 125 calories and 2 SmartPoints, this recipe is a guilt-free delight! Warm, sweet, cinnamon-laced apple, topped with cold creamy ice cream…yum! This is so simple and sooo good – and it’s just for you!

While a fresh apple is a delicious and healthy choice, let’s face it, it doesn’t exactly scream dessert. This 10-minute recipe turns an ordinary apple into a tasty treat that will satisfy your dessert cravings without a trace of guilt. With a hefty 5 grams of fiber and 15% of your daily requirement of Vitamin C per serving, you might even call it health food!

Serves One

Ingredients:

1 medium cooking apple
2 teaspoons no-calorie sweetener* (or 1 packet)
generous 1/4 teaspoon cinnamon
1/4 cup low or no-sugar added light ice cream (like Breyer’s or HaloTop)

Directions:

1. Wash and dry apple. Core apple and use a peeler to strip away the peel on the top third of the apple (this is easy to do by peeling in a circle, starting from the top). Place the apple in a small microwaveable dish. Sprinkle sweetener and cinnamon over top and into the core of the apple.

2. Cover the dish tightly with Saran Wrap and microwave for about 7 minutes on high or until apple is soft.

3. Remove from microwave, remove wrap, and spoon the collected “syrup” back onto top of apple. Slightly split open the apple and top with ice cream.

Skinny Note: This recipe clocks in with 3 Plus Points, or 2 Smart Points, when topped with 1/4 cup of light no-sugar added ice cream.
