Packed with sweet slices of apples, and less than 1 teaspoon of added sugar per piece, this apple “pie” is extra sweet to to make—just lay down the crust, top it, and go! I guarantee your guests will ooh and aah. It’s up to you whether or not to tell them how little time you spent putting it together.
Serves 8
Ingredients
1 tablespoon dark brown sugar
1/4 cup granulated no-calorie sweetener (or 2 tablespoons sugar/stevia blend, like Truvia)*
1 tablespoon plus 2 teaspoons all-purpose flour, divided
1 teaspoon cinnamon
1 1/2 teaspoons vanilla
4 to 5 medium Golden Delicious or other baking apples (about 1 3/4 pounds)
1/2 package refrigerated pie crust (I like Pillsbury’s)
1 tablespoon butter, melted
1 tablespoon granulated sugar
Instructions
1. Preheat oven to 400ºF. Line a baking sheet with parchment paper or a silicone sheet.
2. In a medium bowl, combine the brown sugar, sweetener, 1 tablespoon flour, cinnamon, and vanilla. Peel, core and slice apples into ½-inch slices, add to the sugar mixture and toss well to coat.
3. Sprinkle 2 teaspoons of flour on a flat surface, place the pie crust on it, roll it out lightly to a 12-inch diameter, and place on bak¬ing sheet. Gently pile the apples on the crust, leaving a 1-inch border of plain dough. Gently fold the edges of the dough over the apples, crimping as necessary.
4. Brush the apples with the melted butter and sprinkle evenly with the granulated sugar. Bake for 30 to 35 minutes until the crust is golden brown and apples are cooked. Let cool at least 10 minutes before serving.
*When using all natural low-calorie Truvia for Baking (a blend of stevia and sugar), as directed use 1/2 as much as you would with sugar (or granulated sucralose).
