Creamy avocado takes Ranch dressing to new heights in this versatile dip that’s hard to beat. Serve it with baked tortilla chips and fresh veggies, chicken strips or on even on burgers. Thin it out with a touch of water and you have a wonderful dressing for greens or taco salads.

You’ll also appreciate that it is just 25 calories per tablespoon instead of the usual 80 for the avocado Ranch dressing served up at Taco Bell and other Mexican themed restaurants. Can you double the recipe? Absolutely! It will keep for several days in the refrigerator.

MAKES 12 SERVINGS

Instructions

1 large avocado
2 teaspoons lime juice
1/2 cup light sour cream
1/3 cup light mayonnaise
1/4 cup plain nonfat Greek yogurt
2 tablespoons finely minced green onion
3/8 teaspoon garlic powder
3/8 teaspoon black pepper
1/4 teaspoon salt

Ingredients

1. In a medium bowl, roughly mash the avocado with the lime juice.
2. Add remaining ingredients and stir to combine.
