Got ham? Put it to good use with these easy cheesy biscuits! With the protein of an egg in each, they make a solid breakfast choice whether eaten alone or split with an egg cooked your way tucked into the middle! They are also a great sidekick to a bowl of soup. To jazz them up a touch more and add a bit of color, I sometimes add chopped green onion. About 3 tablespoons added to the flour mix does it.
The recipe can be cut in half. Or make a whole batch, they freeze just fine.
Makes 12 biscuits
2 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon baking soda
2 tablespoons shortening
3/4 cup shredded reduced-fat sharp cheddar cheese
3/4 cup lean cooked chopped ham
1 cup plus 2 tablespoons buttermilk
1. Preheat the oven to 425 degrees F. Spray a large nonstick cookie sheet with cooking spray.
2. In a large bowl, mix together the flour, baking powder, and baking soda. Using your hands or a pastry cutter, cut in the shortening until all the pieces are pea size. (The flour
mixture will look crumbly.) Toss in the cheese and ham and blend.
3. Add the buttermilk and use a spatula to mix just until the dry ingredients are thoroughly moistened.
4. Drop heaping tablespoonfuls of batter onto prepared cookie sheet 2 inches apart. Bake for 13 to 15 minutes, or until golden brown.
Marlene Says: Because my boys usually grab for two of these at a time, I occasionally make them double the size. Use twice the batter for each one and cook for 15 to 17 minutes. To add fiber, you may replace 1 cup of the all-purpose flour with white whole wheat flour.
