Marvel-ous Lemon Mousse

Like my “Marvel-ous Strawberry Blender Mousse“, this 90-calorie (2 point) wonder is super low in calories yet big in luscious creamy flavor! Instead of strawberries, fresh lemon juice and zest are the flavor stars here.

If the rich, creamy, sweet lemon taste was not marvelous enough (and believe me it is), the fact that it packs an impressive 8 grams of protein, is an excellent source of Vitamin C, and has less than a teaspoon of added sugar — all for just 90 calories (and 2 points) per serving — makes it marvelous indeed.

To achieve the touch of airiness you traditionally find in a mousse I fold in beaten egg white, but if the extra step keeps you from making it, simply leave it out. The secret protein-packed ingredient is cottage cheese, but I PROMISE you, no one will even know it’s there. Creamed until completely smooth, it blends in stealthily.

Upon devouring it and hearing the stellar nutrition information my son James said, “Wow, I could even eat this for breakfast.” What a marvelous idea!

(Pictured as shown I made 5 servings. Each fully garnished satisfying dessert had a whopping 125 calories and 3 points :).

MAKES 6 SERVINGS

Ingredients

Finely grated zest of 1 lemon
2/3 cup fresh lemon juice (about 2 large lemons)
1 envelope unflavored gelatin
3/4 cup no-calorie granulated sweetener*
2 drops yellow food coloring (optional)
1/2 cup low-fat cottage cheese
1 cup nonfat or low-fat Greek yogurt
1 large egg white
1 tablespoon granulated sugar
3/4 cup light whipped topping, thawed

Instructions

1. Grate the zest of one lemon and set aside. Place 1/3 cup of the lemon juice in a small in a small microwave-safe bowl and sprinkle the gelatin over it. Let set for 3 minutes, then microwave for 30 seconds on high to dissolve the gelatin. Pour the mixture into a medium bowl (or 4-cup serving dish) and stir in remaining 1/3 cup lemon juice, sweetener, zest, and food coloring (if desired). Set aside to cool.

2. Place the cottage cheese and yogurt in a food processor and blend until smooth (with no cottage cheese curds remaining); whisk or stir it into the lemon juice mixture and place the bowl in the refrigerator.

3. Beat the egg white until foamy. Sprinkle in the granulated sugar and continue beating until stiff, but not dry. Lightly fold the egg white into the lemon mixture followed by the whipped topping. For individual servings, spoon 1/2 cup into 6-individual cups or stemmed glasses. Refrigerate for at least 2 hours before serving.

*Sweetener Options: To use all natural stevia-based Truvia for Baking or another low-calorie twice-as-sweet-as-sugar blend, use 6 tablespoons (or 1/4 cup + 2 tablespoons). Adds 12 calories, 3 grams of sugar, and 1 point.
