Mile High Meatloaf (Times Two!)

In my search for a new meatloaf recipe, a clone recipe for the Cheesecake Factory’s Mile High Meatloaf unanimously took the taste prize. But when it came to baking time and convenience, it lost out to recipes for smaller loaves. My simple solution—create two meals for the price of one! This recipe allows you to cook two loaves at the same time (eat one immediately and use the other for leftovers) or bake one loaf and refrigerate the remaining mix for 2 days or freeze it for up to two weeks.

Feel free to use any mix of meat you please. As most packaged ground turkey comes in 20-ounce packages, I usually start with that. Another great way to go however is to use 1-pound of each lean ground pork and beef. I really like the red wine in the mix, but if you prefer, you can replace it with beef broth.

Makes 10 servings

1 small onion, diced (about 1 cup
1¼ pounds 93% lean ground turkey
¾ pound lean ground beef
½ cup low-fat cottage cheese
2 large eggs
½ medium green bell pepper, diced
¾ cup dry breadcrumbs
¼ cup ketchup
¼ cup red wine (or beef broth)
2 teaspoons Dijon mustard
½ teaspoon black pepper
½ teaspoon salt
½ cup reduced-fat shredded sharp cheddar cheese

1.Preheat oven to 350°F.

2.In a small microwave-safe bowl, cover and cook onions on high heat for 1 minute. Scoop onions into a large bowl and add remaining ingredients. Knead mixture with a spoon or by hand until just uniform. Split meatloaf mixture in half. Form into 2 loaves about 8 inches long and 4 inches wide (or create one loaf and wrap and refrigerate or freeze the other half of mixture). Place loaves onto a foil-lined sheet pan.

3.Cover loosely with foil and bake for 20 minutes. Remove foil and bake for an additional 25 to 30 minutes or until well browned and meat thermometer registers at least 165ºF. Let stand for 10 minutes before serving.

Marlene Says: To cook refrigerated meatloaf mix, form loaf and let sit at room temperature for 20 minutes before baking (may take up to 15 minutes longer to cook). For frozen meatloaf mix, thaw mixture overnight in the refrigerator before cooking.
