Pumpkin Pie Breakfast Smoothie

If you like pumpkin pie you will love this breakfast smoothie! Cool and creamy, it’s a big 16-ounce drink that delivers pumpkin pie flavor and great nutrition with less than half the calories, none of the fat, and a fraction of the carbs of a slice of pumpkin pie.

Better yet when it comes to starting your day on the right foot, this smoothie packs the protein of not one, but two large eggs, 3 grams of heart-healthy fiber, 25 % of your daily calcium needs, and more than three day’s worth of vitamin A.

While the smoothie alone is quite filling, a warm piece of cinnamon swirl toast (like Pepperidge Farms brand) is a wonderful accompaniment (and it adds just 80 calories*).

Serves 1

Ingredients

1/3 cup canned pumpkin (100% packed pumpkin)
1/4 cup low-fat milk
1/2 cup nonfat (or low-fat) Greek yogurt
2 tablespoons sugar-free maple-flavored syrup
1-2 packets no calorie sweetener (I use 1 1/2 packets of Truvia)
1/2 teaspoon ground cinnamon
1/4 teaspoon nutmeg
scant 1/8 teaspoon ground ginger
1/4 teaspoon vanilla
3/4 cup crushed ice

Instructions

1. Place all of the ingredients, except the ice, in a blender. Blend to mix.

2. Add crushed ice and blend on high until the ice is completely incorporated and drink is thick and frothy (can add up to 1/4 cup more ice if needed).
