Easy Reduced Sugar Strawberry Muffins

With less than half the calories and a third of the usual sugar and fat, these quick low-sugar muffins made sweet with all-natural strawberry jam are guaranteed to make you smile. Can you smear them with peanut butter instead of jam, of course, you can!

Makes 12 servings

2 large eggs
1/4 cup margarine or butter, melted
1/2 cup low-fat milk
3/4 cup low-sugar strawberry jam (like Smuckers)
1 1/2 teaspoons lemon zest
1 3/4 cups all-purpose flour
3 tablespoons granulated sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
12 teaspoons low-sugar strawberry jam

1. Preheat the oven to 375°F. Lightly spray 12 muffin cups with non-stick baking spray (or line with paper or foil liners). In a large measuring cup or medium bowl, whisk together first 5 ingredients (eggs through zest). Set aside.

2. In a large bowl, combine the flour, sugar, baking soda, and baking powder and stir. Make a well in the center and add the jam mixture. Using a large spoon, stir just until the dry ingredients are moistened.

3. Spoon the batter evenly into prepared muffin tins, filling each cup two-thirds full. Bake for 15 minutes or until the center springs back when lightly touched. Cool for 5 minutes before removing to a wire rack. Serve each muffin with 1 teaspoon jam.

Marlene Says: Smucker’s low-sugar jams are sweetened with only fruit. I like them as they taste as sweet as the regular variety but with half the sugar and calories. I also use the no-sugar variety when developing recipes, but recommend using the low-sugar product (or another lower sugar jam of your choice) for this recipe. Trader Joe’s reduced sugar jams are also good.
