Here’s a little back to school math for you, strawberries + orange juice + banana = one seriously delicious drink. This slimmed down version of the familiar fruity, frothy, and fabulous “Julius” drink has less than half the usual sugar, the protein of one egg (without the fat), and 1½ servings of real fruit in just 130 calories. A quick fix any when you blend it, it’s one of my favorite portable meals.
For hungry kids (and husbands), simply add a piece or two of whole grain toast topped with peanut butter, and I guarantee, they’ll be satisfied for hours.
Makes 1 serving
1/3 cup frozen strawberries
1/3 cup light orange juice
½ small banana
¼ cup liquid egg substitute
2 packets no-calorie sweetener (or 2 teaspoons of honey*)
2 tablespoons low-fat milk
¼ teaspoon vanilla extract
½ cup crushed ice
1. Place all the ingredients, except the ice, in a blender. Blend to mix.
2. Add crushed ice and blend on high until the ice is completely incorporated.
*Adds 40 calories and 10 grams of carbohydrate
