Easy, impressive, and most of all, oh-so-tasty, this amazing sweet and salty salad/appetizer is a new summer favorite!
Cold, juicy, sweet watermelon, paired with creamy, salty feta and fresh mint is a delectable combination of color and taste. It’s no wonder it’s become a summer salad sensation. The problem for me with many such salads is that 1) cubing up a watermelon is, well, a chore, and 2) after the first few guests get scooping, the cheese and watermelon mix together and the pretty salad quickly turns into a pretty mess.
No more! When made “pizza-style” this salad/appetizer is truly amazing. First, it’s as quick and easy as it can be. Prep is a breeze, taking mere minutes as you simply slice the watermelon and 2) it not only looks incredible, the flavors mingle just right, from the first bite until the very last! And as an added bonus, no forks or plates are required! Simply place out some napkins and lets folks grab a slice.

Ingredients
MAKES 4 SERVINGS
1/4 cup balsamic vinegar
1/2 (to 1 teaspoon honey depending on the sweetness of the vinegar)
1 1/2 to 3/4” slice of watermelon
1/4 cup slivered red onion
2 tablespoons crumbled feta cheese
1 tablespoon fresh mint leaves, thinly sliced.
Instructions
1. To make the balsamic syrup, stir the vinegar and honey together in a small pot, and simmer over medium heat for 4 to 6 minutes, or until thick and syrupy and reduced by one-half (watch carefully near the end of cooking – once reduced, the syrup can quickly burn.
2. Cut watermelon round into 4 wedges, keeping pieces together. Top watermelon evenly with onion slivers, followed by the feta and mint. Drizzle 2 teaspoons of balsamic syrup over the entire watermelon round immediately before serving (there will be leftover syrup).
